This evening for dinner we had sweet & sour meatloaf from beef from a friend who raises beef cows. I don't even know if that's the right name for them . . cows that . . well . . you know how that story goes.
The veggies were collards, okra and eggplant from the garden. I so wish I could grow enough that we only ate what we grow or buy from others who grow it.

Funny story on the collards. I'm so short on garden space so I couldn't wait for the collards to bolt so I could pull them out and plant beans in their spot. I pulled them all out, planted my beans and the collards kept popping up and soon, there were more collards than beans. I would pull the collards out and finally gave up. Now . . it's a mess but soon the beans will be done.
My grandma always said we shouldn't harvest greens til after a light frost. We haven't had a light frost yet but I felt like I needed a jacket this morning so I figured it was a good day to harvest some collards for dinner. Waiting for cooler weather is supposed to make them sweeter so I wasn't sure what to expect but they were great so we'll be having collards several times a week til probably June or July.
I also have a whole bed of arugula that came up where I had last year's arugula. I had waited so I could save the seeds but now I'm not even going to have to plant more because there's so much already out there. Wish everything would do that. I probably shouldn't say that . . some of those things can get a bit aggressive if left to do what they want to do. I did tell Vince not to buy arugula . . it's out there wanting to be picked.
Judy, our family loves a meatloaf that has a little horse radish in it.. Love the flavor but is that something you don't like. The sweet and sour meatloaf sounds delicious.
ReplyDeleteNever thought of adding horseradish to meatloaf. We love horseradish and I have it growing in the back yard. Definitely going to try that. Thanks!
