Breakfast Banana Bruschetta

 This is a recipe I found in the archives of "My Lime Green Kitchen". Just a little background . . when we moved to Nevada, MO in 2006, the house we bought had what I called a lime green kitchen, breakfast room and dining room. It was really a goldish green. Here's a picture from the old blog - not a great picture but it was in the header.


I loved that color! I wish we had saved the paint color. I'm sure I could get close but sure I would ever do it. I've always loved lime green anything.

Anyway . . 

Breakfast Banana Bruschetta

This recipe is great and very quick to fix. Not healthy in any way probably but great when we need something easy to fix that's yummy! I don't know . . looking at it, maybe it isn't terrible. 


6 - 1/2 to 3/4-inch thick slices sweet Hawaiian bread, or any French bread
1 medium banana, mashed
1/2 cup softened cream cheese
1 1/2 teaspoons unsweetened cocoa powder
3 medium bananas, thinly sliced
1 tablespoon butter, melted
1/4 c. brown sugar
Sifted powdered sugar

Toast bread and let cool. Combine mashed banana, cream cheese, and cocoa powder in a medium bowl. Spread some of the mixture over each toasted bread slice.


Place slices on a cookie sheet. Layer banana slices on top of cream cheese mixture. Brush bananas with melted butter or margarine. Sprinkle with brown sugar.

Broil bruschetta 4 to 5-inches from the heat for 30 to 60 seconds or until banana slices just begin to glaze. Sprinkle tops with sifted powdered sugar and serve with warm maple syrup.

  1. Sounds tasty! I would eat that for sure. I too love lime green. I had a lovely lime green business suit with a peplum and gold buttons in either the late 80s or early 90s. Never a lime green room though.

    1. Your lime green outfit is so funny. I had one too (and lime green shoes to match). When Vince was still living in Georgia and I was still living in Louisiana, we would sometimes meet in FL for a weekend. I would leave right after work and drive over (about 5 or 6 hours for each of us to drive) and at that time, he wasn't fully aware of my taste in clothes. Once I got there with my lime green outfit and lime green shoes on. We had to wait outside on a patio for our table and, with it being in FL, there were all kinds of plants around. I was sitting on a bench and an adorable lime green baby lizard poked his head out of the bush and was looking at me. In a baby voice, Vince said "Mama! Mama?" . . like the baby lizard thought I was his mama. That's a funny memory. That was in the early 90's too. :)

  2. You’ve had a lot of blogs! I was curious, so looked for Lime Green Kitchen at the Internet Archive, but ended up at a Blogger login page in German, asking for “E-Mail oder Telefonnummer”. I gave up at that point. The internet is a strange and wonderful place. Dot in NC

    1. The Lime Green Kitchen blog no longer exists but some of the old posts are in the archives that I can see on my end. I had forgotten about the Banana Bruschetta and I always loved that recipe so figured it was worth sharing.
