I've been making our bread for the past several years. My bread got much better after I bought a bread machine. I only use the dough cycle and then I shape the dough into whatever type bread I need for the final rise and baking. I use the same recipe for everything, so I made my own "mixes" by putting all the dry ingredients, minus the instant yeast, into quart jars. Whenever I make bread, I put the wet ingredients into the bread machine and then dump the "mix" and add the yeast. I'm hoping by leaving this comment, this will inspire someone who has a bread machine collecting dust in a closet to get it out and use it. I never did like bread made in the machine, but the dough cycle is a wonderful tool.
I do the same thing, but every type of bread from sourdough to rye etc. etc. I have a bad right arm so kneading was very painful. Solution bread maker!

ReplyDelete2 tablespoons sugar or honey
1 egg
1/4 cup melted butter
1 teaspoon salt
3 cups bread flour
2-1\4 teaspoon instant yeast
Put ingredients in pan in the order listed. Select dough cycle on bread machine. Mine is one hour and thirty minutes. At the 45 minute mark (after the last knead) I will lightly spritz the top of the dough with oil (this keeps the dough from drying out). When the cycle has ended shape dough and let rise for 30 minutes. Bake at 350 degrees for 30 minutes for loaf of bread. This will make a huge loaf of bread. I divide the dough into fourths and use three fourths for a loaf of bread and form the other fourth into a few rolls. This recipe will also make 24 slider buns that I bake in a 9 x 13 casserole dish at 350 degrees for 18 minutes (a family favorite). I use these rolls to make slider sandwiches and they are always a hit. I freeze fully cooked rolls, and they thaw quickly to be used for a meal. I top all bread products with melted butter after baking. I also freeze loaf slices two per ziploc bag. This is the dinner roll recipe that I got from Little Hill Homestead on Youtube.
I read your post again and realized you asked about the bread machine and not the recipe. I actually have two. I have a Hamilton Beach Artisan Bread Maker that I got from Amazon, and I have a Welbuilt that I bought at Goodwill for $10. There are some days that I use both bread machines, depending on how much bread I need to make. I love that I can load them and set a timer and go about my day while the machine is doing the work.
